Pour coconut milk into large measuring cup (at least 4 cups). Whisk until smooth, making sure to break up any clumps of coconut creme.
Zest and juice the limes and add to the coconut milk. Add sugar, shredded coconut, and pinch of salt. Whisk again until sugar is dissolved.
Pour into popsicle molds. Freeze 8 hours or until firm. Right before serving, run popsicle mold under hot water for 1-2 minutes. Unmold and serve immediately.
