  • Popsicles Molds


  • 1 400ml/13.5oz can coconut milk (full fat, canned, not the boxed kind)
  • 1/4 cup sugar
  • 2 limes
  • pinch salt


  • Pour coconut milk into large measuring cup (at least 4 cups). Whisk until smooth, making sure to break up any clumps of coconut creme.
  • Zest and juice the limes and add to the coconut milk. Add sugar, shredded coconut, and pinch of salt. Whisk again until sugar is dissolved.
  • Pour into popsicle molds. Freeze 8 hours or until firm. Right before serving, run popsicle mold under hot water for 1-2 minutes. Unmold and serve immediately.
