Tips for Cooking with Gochujang
Some helpful tips as you cook with Gochujang:
- Balance with sweetness. To balance the intense, spicy flavors of Gochujang, add sugar. Any kind of sweetener works, including rice syrup, corn syrup, maple syrup, or honey. In Korean cooking, they are commonly added to balance Gochujang’s heat and savory elements.
- Beware of burning + charring. Gochujang easily burns and chars because of its thick texture and sugar content. Watch gochujang-marinated meats carefully as they cook. Cook on medium to medium-low heat and flip often if there’s a lot of charring.
- Don’t use it like hot sauce. Gochujang is a thick paste. It’s not really meant to be used like hot sauce. The texture will be too thick and the flavor will be too intense. Mix it with other ingredients to create a sauce or glaze. For example, sesame oil, vinegar, soy sauce, and maple syrup or honey.
